But Ells had a vision, and he wasn't afraid to bet on it. He invested his entire $80,000 savings, along with a $85,000 loan from his father, to open the first Chipotle restaurant.

The concept was simple yet revolutionary: serve high-quality, sustainably-sourced ingredients, prepared in front of customers, and assemble their meal exactly how they wanted it. It was a departure from the traditional fast-food model, and customers couldn't get enough.

Growing Pains and Success

The early years weren't all smooth sailing. Ells struggled to find investors who believed in his vision. But he persevered, and in 1998, McDonald's took notice and invested $360 million in Chipotle, helping the chain expand rapidly.

By 2006, Ells stepped down as CEO to focus on culinary operations, but he remained the chairman of the board. Under his leadership, Chipotle grew from a single restaurant to over 2,400 locations across the globe.

Ells' Legacy and the Future of Chipotle

Steve Ells' impact on the fast-casual industry is undeniable. He pioneered a new way of thinking about fast food, emphasizing quality, sustainability, and customer experience. His vision has not only transformed Chipotle into a multi-billion dollar company but has also inspired a generation of restaurateurs.

Today, Ells continues to be involved in Chipotle as the executive chairman. He's also ventured into other culinary projects, including opening The Next Door Kitchen & Bar, a fine dining restaurant in Denver.
